My favorite drink at the local juice bar is called Roots Remedy. It’s a lovely juice made of beets, apple, lemon, and ginger. I enjoy the way that it’s both refreshing and warming at the same time. The bright pink color the juice takes on from the beets is sensationally satisfying. If I close my eyes now, I can just see myself: the sun shining, a nice walk along the river, with a beet juice in hand.
Luckily for you, today’s recipe is a very similar beet blender juice, so you can enjoy the same blissful satisfaction made at home. This blender juice recipe comes from one of our fantastic contributors, Annie Markowitz. In her original post, she praises the nutritional qualities of beets saying, “Beets are another wonderful food for your body. Not only are they full of vitamins and minerals (Vitamins A, B, and C, folate, phosphorus, and magnesium, to name a few), they have also been found to detoxify the blood, improve mental health, and prevent cancer (source).” Wow! Beet juice here I come!

Blender Beet Juice
Makes 2 servings | Prep Time 10 minutes
Blender beet juice is a refreshing way to energize your day. Beets, carrots, apple, kale, celery, lemon, and ginger come together to make a healthful juice!
1 lemon, juice of
1 inch ginger
1 leaf kale, destemmed
1 stalk celery
Chop the beets, carrots, apple, and celery into 1 inch pieces.
Destem the kale and chop.
Squeeze the lemon juice.
Combine all the ingredients in a high-speed blender and blend thoroughly.
Strain through a fine mesh strainer.
