The first thing you need to do for this simple dessert is to create a stash of frozen bananas in your freezer. Choose ripe bananas, peel the skin, and break into 2 inch pieces. I just freeze a bunch or two of bananas at a time and keep a bag in the freezer at all times. The other thing you'll need is a high-powered blender or food processor. Once the bananas are frozen, you're ready to make your first batch of nice cream.
Chocolate Banana Nice Cream
Makes 1 serving | Prep Time 10 minutes
Raw vegan ice cream is naturally sweetened with bananas and dates. A dairy-free chocolate “nice cream” that is sure to satisfy!
3-5 frozen bananas
3-4 pitted Medjool dates, (if not soft and stiky, soak in warm water for 10 minutes and then drain)
2 Tbsp. cacao powder
Add frozen bananas and cacao powder into the blender or food processor.
Add up to 1 cup of cold water to keep things moving.
Blend until desired consistency is achieved.
