My favorite drink at the local juice bar is called Roots Remedy. It’s a lovely juice made of beets, apple, lemon, and ginger. I enjoy the way that it’s both refreshing and warming at the same time. The bright pink color the juice takes on from the beets is sensationally satisfying. If I close my eyes now, I can just see myself: the sun shining, a nice walk along the river, with a beet juice in hand.

Fennel has a very distinct flavor, when eaten raw it is crunchy like an apple yet tastes like black licorice. When roasted, fennel becomes soft and a bit sweeter. Fennel and apple are an excellent flavor combination and tastes incredible when combined with the smokiness of the bacon.
