Zen Salad

Makes 1 Serving | Prep Time 10 minutes


½ head kale
½ avocado
1 small mango
Juice from 1 lime
1 zucchini
½ cup mushrooms
3 green onions


First rinse your kale and break it up into bite-sized pieces.

Then, massage ½ avocado into kale and set this mixture aside.

Next, spiralize the zucchini setting aside the un-used ends.

Add the zucchini ends into a blender with the mango, green onions, and lime juice. Blend until smooth!

Cut up the mushrooms into small chunks.

Now you are ready to prepare your Zen Salad! Take your time decorating it ~ and enjoy!
